Mango Fruit Cake

Preheat oven to 160 deg.
Grease and line a large loaf tin (15 cm x 25cm) or ring tin or square tin.
(I sometimes cook mine in a lamington or deep slice tray and reduce
the cooking time a bit)

In a large saucepan, place:
1x 425 gm tin mango slices, undrained, chopped roughly.
500 gm mixed fruit (3 large cups)
half a cup of water
2 tabs of sugar.

Bring to boil and simmer 1 minute. Set aside to cool

Stir in to the cooled mixture:
1½ cups self raising flour )
1½ teaspoons bicarbonate of soda) sifted together
1 teaspoon mixed spice )
2 eggs, lightly beaten

Mix well.
Place in prepared tin.
Cook about 1 hour or until skewer comes out clean
