Strawberry jam – small batch.
250g punnet strawberries – washed, hulled and sliced.
3/4 cup sugar
1 tablespoon fresh lemon juice, and some zest.
Put sliced strawberries and sugar in a small saucepan, mix well.
Place on moderate heat, stirring constantly, until it comes to the boil.
Add lemon juice and zest.
Boil for 15 minutes on the moderate heat, stirring occasionally so it doesn’t burn or boil over.
Allow to cool slightly and pour into a jar.
