Lemon Butter from Laura

4 eggs – beat well
500 g sugar – add to eggs and beat well
Rind of 4 lemons and juice of 6 lemons – add slowly and beat well
250 g (real) butter – chop roughly and add to mixer.

Transfer mix to top pan of a double saucepan and cook over gently simmering water until consistency of honey but keep stirring (mine took around an hour).

Bottle in hot, sterile jars and allow to cool and thicken.

You will get 2 large or 3 medium jars from the mix.
