Treacle gingerbread loaf

Ingredients  1 ¼ cups plain flour

¾  cup self raising flour

1 teaspoon bicarb soda

3 teaspoons mixed spice

1 tablespoon ground ginger

¾ cup soft brown sugar

¾ cup  treacle (can use golden syrup also)

¾ cup milk

1/3 cup light olive oil

2 eggs

Method         preheat oven to 180 degrees celcius.  Grease a 10 x 20 x 7 cm deep loaf tin and line with baking paper, ensuring the paper extends 3 cm above the tin

Sift the flours, bicarb, ginger and mixed spice into a  bowl.  Stir in the sugar until well combined.  Whisk the treacle, milk, olive oil and eggs in the mixing bowl.  Add the flour mix and stir until combined.

Pour into the loaf tin and bake for 40-45 mins, or until a cake skewer inserted into the centre comes out clean.  Remove from the oven and leave in the tin for 5 mins, then turn out into a wire rack to cool completely.
