Melt 125g butter. Cool slightly.
Add 1 beaten egg, 2 tablespoons milk.
Mix 1 cup sugar and 2 cups self raising flour and 1 teaspoon cinnamon.
Add a cup of finely chopped glace cherries and/or crystallised ginger, choc chips, nuts, chopped dried apricots, etc, etc. Mix well.
Mix in melted butter mixture, and spoon onto greased (or lined) baking trays, press down with a fork.
Alternatively, divide the mixture into 4 or 5 batches, roll out each batch into a sausage like shape, and cut into 1cm slices.
Bake at 210C for 10 minutes.
They keep very well.
