Pumpkin Cake Recipe (suitable for diabetics)
1 cup (130g) wholemeal flour
three-quarters of a cup (95g) plain white flour
1 teaspoon baking soda
1 teaspoon cinnamon
half a teaspoon cloves (presumably powder)
half a cup (85g) sultanas
half cup (50g) finely chopped walnuts
1 cup (170g) mashed cooked pumpkin
1 cup (160g) brown sugar
half a cup (125ml) polyunsaturated oil
Place wholemeal flour in a mixing bowl. Sift in white flour, soda, cinnamon and cloves. Mix dry ingredients together with sultanas and walnuts.
Beat pumpkin, sugar and oil together until thick and smooth. Stir into dry ingredients.
Placed in a greased, lined oaf tin and bake in a moderate oven for 35 minutes or until skewer comes out clean.
Serve sliced with or without butter.
