Gluten Free Waffles

1 cup brown rice flour
½ cup sorghum flour
½ cup tapioca flour
3 tsps g/f baking powder
2 tbsp brown or raw sugar
½ tsp salt
2 eggs separated
1 ¾ cup milk
¼ melted butter

Combine dry ingredients and mix egg yolks, milk and butter until smooth and set aside.
In another bowl whisk egg whites until sift but not dry.
Gently fold egg whites into flour mixture
Spray waffle iron, pour and bake until golden brown (about 3-4 mins for most irons)
Makes 8 large waffles
Serve with pure maple syrup or jam or berry syrup..
The waffles freeze well

We like to have them with ice cream with a mixed berry sauce.
