Gluten Free Biscuit Recipe
1 cup Tahini Paste or Peanut Butter or Almond Butter (can be 1/2 Peanut, rest Tahini or mix how you like as long as it is 1cup total.)
1cup sugar white or brown
1 egg.
I know it sounds weird & hoped it worked when I tried it. I came across this recipe on a website possibly SBS Food or elsewhere on the Internet.
Mix the three ingredients together then roll into balls about the size of a walnut or bit bigger. Put onto a lined biscuit tray & flatten then cook at 180C for about 8-10mins or until light golden. My first batch took longer for some reason. Leave them to cool on the tray as they just fall apart otherwise. I used crunchy peanut butter & tahini paste which were nice.
Only made one tray to start as I was in a hurry & off to “lace”. Left the rest of the mix sitting on the bench & made the rest of the biscuits when I came home. Put them in the oven, got involved with something else instead of keeping a close watch they cooked a deep brown but still tasted OK as friends visiting later in the day took most of them home. Can be sprinkled with sesame seeds or I suppose crushed peanuts if wanted. In the picture of them which wasn’t very clear some looked darker brown & it was after the comment about using brown sugar so I presume it makes them a darker colour. Try & enjoy!!!
